酿酒酵母发酵产乙醇过程中细胞生长与乙醇生产关系的研究

摘 要: 利用连续流搅拌槽式反应器(CSTR)体系,结合秋水仙素抑制细胞生长实验,对不同稀释率下酿酒酵母乙醇发酵过程进行研究,实验表明乙醇产生速率与细胞生长密切相关。高细胞密度乙醇发酵可以提高乙醇发酵水平和葡萄糖利用率。高细胞密度乙醇发酵实验证实,在发酵到44 h时,乙醇浓度达到160 g/L;69 h时,其细胞干重为85 g/L,乙醇浓度高达167.121 g/L,葡萄糖的利用率达到了94.23%.

Title: Study on the relationship between the growth of cell and the production of ethanol in the process of ethanol fermentation with Saccharomyces crevisiae

Abstract: Researched on the process of ethanol fermentation with Saccharomyces crevisiae at different dilution rate by CSTR system, we drew a conclusion that high cell concentration fermentation can improve the level of ethanol fermentation as well as the utilization rate of glucose. High cell concentration fermentation experiment we did confirmed the conclusion. At 44 h of the fermentation, the concentration of ethanol was 160 g/L. At 69 h, dry weight of cells was 85 g/L; ethanol concentration was 167 g/L, and the utilization rate of glucose was 94.23%. Besides, we found that the ability of ethanol producing by yeast cell lied on the growth of cells. In another words, well-grown cells have higher specific ethanol productivities.
