循化线辣椒中辣椒素含量的测定

摘 要: | 本文主要根据亚硝酸钠法利用辣椒素的甲氧基与亚硝酸钠—钼酸钠试剂反应生成黄色络合物原理,对青海循化地区6种线辣椒中辣椒素含量进行了测定。辣椒素经过碱性水溶液超声提取,大孔树脂柱层析,用380 mg/L香兰素液取代200 mg/L标准辣椒素液,并在420 nm波长下进行比色测定。此方法解决了国内因缺乏标准辣椒素而不能进行辣椒素测定的困难,测得辣椒素含量范围是2.282~3.266 mg/g,属于中等水平的含量,并通过对测试条件的优化使提取效率更高,方法精密度RSD为2.68%,测定结果准确,重现性好。线辣椒中辣椒素含量的测定为循化辣椒品质的评价及改善提供了可靠的依据。 |

Abstract: | This paper has mainly carried on the determination to the capsicin content of Xunhua 6 kinds of line capsicum in Qinghai by the principle of reaction of capsicin's methoxy and sodium nitrite-sodium molybdic into yellow complex, the capsicin was abstracted by the alkaline water solution and ultrasonic in the experiment, and then fluided the pocket colophnoy column, determinated under 420 nm wave length by colorimetry substituting for 200 mg/L standard solution with 380 mg/L vanillin solution, which resolves the difficulty of hard to determine the capsicin for lack of standard capsicin, and the method precision RSD is 2.68%, the result of which was accurate and reappeared well. The determination of capsicin provided the basis to evaluate and improve the quality of Xunhua capsicum. |
