黑豆种皮红色素理化性质研究

摘 要: | 以黑豆种皮为原料,对红色素理化性质进行研究。结果表明:黑豆红色素对热、还原物质、蔗糖、苯甲酸钠以及部分金属离子较稳定,对光照和氧化物质不稳定。研究表明:该红色素提取方法简便、易于操作、性质较稳定,是一种较好的天然色素资源。 |

Abstract: | The paper takes black bean seed coat as raw material, and studies physical and chemical properties of the red pigment. The results showed that: the red pigment is stable to heat, reductive material, sugar, sodium benzoate, and some metal ions, and instable to light and oxidative material. The red pigment extraction method is simple, stable, easy to operate, and it is a good resource of natural pigment. |
