我国食用菌中污染物(重金属、放射性物质、微生物)残留和食品添加剂使用标准与CAC、欧盟+英国、美国、日本、韩国标准比较研究

摘 要: 旨在评估我国食用菌污染物(重金属、放射性物质和微生物)限量、食品添加剂使用控制水平,打破或跨越技术性贸易壁垒。对GB 7096—2014引用的GB 2762—2017、GB 2760—2014、GB 29921—2021和GB 14882—1994与国际食品法典委员会(Codex Alimentarius Commission,CAC)、欧盟+英国、美国、日本、韩国食用菌及类似产品重金属、放射性物质、微生物和食品添加剂种类及限量比较分析,揭示其差异和特征。研究表明,我国食用菌和/或蘑菇(鲜)标准中的重金属残留控制种类多于CAC和欧盟+英国、美国、日本、韩国标准,我国相同的重金属限量宽于其他标准;放射性污染限量严于CAC和欧美日韩标准;微生物种类多于CAC、欧盟+英国、美国、日本,少于韩国标准中的微生物种类,相同微生物其限量值一致;食品添加剂使用标准差异较大,我国食用菌(鲜或冷却)不得使用食品添加剂,严于CAC和欧美日韩。我国食用菌中重金属和放射性物质污染、致病性微生物、食品添加剂使用标准与主要进口国家和CAC标准在种类及限值差异较大,出口食用菌应满足进口国家(地区)要求,保障其出口安全,促进食用菌产业高质量发展。

Abstract: To evaluate pollutant heavy metals, radioactive substances and microorganisms limits and control level of food additive use in edible fungi and break or cross technical trade barriers. Types and limits of heavy metals, radioactive substances, microorganisms and food additives in edible fungi and similar products were analysed via the standards comparison between China, where GB 2762—2017, GB 2760—2014, GB 29921—2021, and GB 14882—1994 were referenced in GB 7096—2014, Codex Alimentarius Commission (CAC), EU+UK, USA, Japan and South Korea’s related standards. The differences and characteristics of those indicators were revealed. Heavy metal control types of edible fungi and/or mushrooms (fresh) in China’s standards are more than those in CAC, EU+UK, USA, Japan and South Korea’s, and the limit of same heavy metal in our country is wider than other standards. The limit of radioactive contamination in domestic standard is less than CAC, EU+UK, USA, Japan and South Korea’s standards. Microorganism species is more than CAC, EU+UK, USA and Japan’s, and less than South Korea’s, and the limit values of same microorganism species are consistent. The standards for the use of food additives are quite difference. Food additives are not allowed for fresh or frozen edible fungi in our country, which is stricter than CAC, EU+UK, USA, Japan and South Korea. Standards from our country for the items and limits of heavy metals, radioactive pollutions, pathogenic microorganisms and food additives in edible fungi are quite different from the mainly imported countries and CAC standards. Edible fungi export should comply with the requirements of the imported countries (area) for ensuring the export safety and promoting the high-quality development of the edible fungus industry.
