超临界流体萃取技术及其在食品领域中的应用

摘 要: 超临界萃取技术(supercritical fluid extraction, SFE)是以超临界状态的流体作为溶剂,利用该状态下具有的高渗透能力和高溶解能力,萃取分离混合物质的一项新技术。超临界流体技术具有操作简单、无污染和选择性好等特点,在医药、食品、环保和化学工业等领域有着广阔的应用前景。本文主要介绍了超临界流体的特性,超临界流体萃取技术的基本原理、特点和萃取工艺,并对该技术在天然香料和风味物质、天然色素及各种天然添加剂、动植物油脂、动植物生理活性成分的萃取;有害物质的分离和除去;农药残留分析及食品生物工业中的研究和应用现状进行了比较详细地综述。从而推动超临界流体萃取技术在食品领域的进一步推广和应用,并为相关工作人员提供一定的参考。

Title: The technology of supercritical fluid extraction and its application to food industry

Abstract: The supercritical fluid extraction(SFE) is a new technology which extracts and separates mix materials taking the supercritical fluid as the solvent, and uses high seepage ability and high dissolving capacity under this condition. The supercritical fluid technology does not cause pollution, has good selectivity and operates simply, so it has been used in medicine, food, environmental protection and chemical industry and demonstrates the broad application prospect. This paper introduced the characteristics of supercritical fluid, principles, fundamentals and technology of supercritical fluid extraction. Furthermore, the extraction of natural perfume and flavor material, natural pigment and each kind of natural chemical additive, zoology and botany fat, zoology and botany biological activity ingredient; separation of deleterious substance; analysis of pesticide residue and the research and application in food biology industry by SFE were also summarized. this paper is purposed to to provide people with reference and promote popularization and application of the supercritical fluid extraction technology in food industry.
