基于风险思维的水果罐头食品安全风险分析

摘 要: 为保证水果罐头食品从供应环节到销售阶段的安全性,基于风险思维,从产品设计伊始到生产加工再到储运销售各个环节对水果罐头进行潜在危害分析,制定生产过程中的危害分析关键控制点(hazard analysis and critical control point,HACCP)计划表,并对后期的储运销售提出相关预防措施,逐步实现从产品监管到食品产业链全过程的预防性监管,以最大程度地保证水果罐头食品安全。

Abstract: To ensure the safety of canned fruit food from the supply link to the sales stage, based on the risk thinking, this paper analyzes the potential hazard of canned fruit in every link from the beginning of product design to processing then to storage, transportation and sales, and also formulates hazard analysis and critical control point (HACCP) schedule in the production process. Relevant preventive measures are also proposed for the later storage, transportation and sales, to gradually implement preventive supervision from product supervision to the whole process of the food industry chain, in order to ensure the maximum food safety of canned fruit.
