数据处理对大米仪器分析和感官评定相关性的影响

摘 要: 选用21种市售大米,用物性分析仪的质构剖面分析(texture profile analysis,TPA)模式测定米饭的质构特性,用快速黏度分析仪(rapid viscosity analyzer,RVA)测定米粉的糊化特性,根据国家标准(GB/T 15682—2008)对大米食味品质进行感官评定,对所获得的品质数据和感官评定得分进行相关性分析和回归模型的建立。比较数据缩放(标准化)和log转化处理前后所获相关性分析和回归方程的结果。在达到显著性意义的情况下,对原始数据进行过数据处理的相关性分析和回归方程的标准估算误差偏低,准确度高。相关性分析和回归方程结果表明:米粉的最终黏度、回生值与感官评定得分有显著负相关关系;米饭的胶黏性与感官评定得分有显著负相关关系;米饭的凝聚性与感官评定得分有显著正相关关系。

Title: Influence of data processing on the correlation between instrument analysis and sensory evaluation of rice

Abstract: 21 kinds of commercial rice were selected, the texture characteristic of rice was determined by texture profile analysis (TPA) mode of texture analyzer, the gelatinization characteristic of rice flour was determined by rapid viscosity analyzer (RVA), and the sensory evaluation of rice taste quality was conducted according to the national standard (GB/T 15682—2008). The correlation was analyzed and regression model was established for the texture data and sensory evaluation scores. The results of the correlation analysis and regression equation obtained before and after data scaling (normalization) and log conversion were compared. When the significance was reached, the correlation analysis and regression equation of the original data after data processing had lower standard estimation errors and high accuracy. The results of correlation analysis and regression equation showed that there was a significant negative correlation between the peak viscosity, regeneration value and sensory evaluation scores of rice flour, and a significant negtive correlation between gumminess and sensory eveluation scores of rice. There was a significant positive correlation between cohesiveness and sensory evaluation scores of rice.
